A while back An Iowa Mom wanted a simple, yet impressive appetizer for her Bunco night. When I made this the other day for a backyard cookout I immediately thought of her. So, Iowa Mom, this is for you:
Mediterranean Marinated Cheese
So simple, it's a recipe from Kraft.
Prep: 10 minutes
TotalTime: 1 hour 10 minutes (including refrigerating)
1 pck. (8oz) cream cheese
1/2 c. Kraft Sun Dried Tomato Vinagrette Dressing
2 cloves garlic, sliced
3 small sprigs of fresh rosemary, stems removed
6 sprigs fresh thyme, cut into pieces
1 tsp. black peppercorns
Peel of lemon, cut into thin strips
Cube cream cheese into about 36 pieces (just keep halving until you have 8 pieces, then cube thoese into 8 pieces each). Place in a 9-inch pie plate.
Add remaining ingredients to dish, toss lightly, cover.
Refrigerate at least one hour (up to 24).
Serve with crackers, crusty bread or pita chips. Each cube spreads nicely and is perfectly proportioned.
This was a big hit with everyone- and no one knew how easy it really was! I served it with toasted crusty bread that I found in the bakery and olives. The ice was to keep it cool as we were outside.
You'll get rave reviews for this! The kids even loved it!
